Blueberry Muffin Smoothie: A Kid and Parent Favorite

With sweet blueberries, bananas, oats, walnuts and milk, this nutritious smoothie blends to a beautiful shade of purple. Plus, it makes kids and adults alike happy. After all, who doesn’t love a blueberry muffin?! 

The big bonus? It’s so good for you. You’ve got superfood blueberries, of course, but this smoothie is also filled with protein-and-fiber-rich oats and walnuts, which get completely blended in. Feel free to toss in a handful of baby spinach to up the nutrition ante even more. Trust us, you won’t even taste it.

We’ve also included freezer smoothie pack instructions, so you can prep several of these ahead to have on hand. This time-saving, money-saving hack makes healthy eating even easier, since you’ll always have smoothies ready to blend.

With a high-powered blender and a few simple ingredients, your family will love this no-guilt, dessert-like smoothie for breakfast or a snack any time.

Makes: One (16-ounce) smoothie

INGREDIENTS
1 – 1½ cups unsweetened plain almond milk (or your choice of milk)
½ banana
1 cup frozen blueberries
2 tablespoons old-fashioned rolled oats (for GF: look for gluten-free oats)
2 tablespoons chopped raw walnuts (or chopped raw pecans or almonds)

MAKE IT NOW
Start by adding 1 cup milk to a high-powered blender. Then, add all the other ingredients. Blend until smooth. You may need to stop and stir/shake the blender or add up to a 1/2 cup more of almond milk, as needed, to make sure it gets smooth.

MAKE FREEZER SMOOTHIE PACKS FOR LATER
Layer ingredients in small freezer bags in this order:
½ banana, sliced
1 cup fresh or frozen blueberries
2 tablespoons old-fashioned rolled oats (for GF: look for gluten-free oats)
2 tablespoons chopped raw walnuts (or chopped raw pecans or almonds)
Seal tightly, squeezing out the air, and freeze for up to 3 months.

To blend:
Pour 1 cup milk into a high-powered blender first. Break up the ingredients in the bag by hitting it on the counter or crunching it with your hands. Dump the ingredients from the bag in and follow blending instructions above.
